Ginger is a must have in this dish because it blends extremely well with the pineapple juices. Their flavors compliment each other as ginger offers a mildly spicy and peppery flavor, pineapple is sweet and tangy.
For the topping green onions can be replaced with cilantro. Both are good options that offer the dish a refreshing taste. Chopped green onions provide a crunch and texture contrast to the chicken.
